🍲🍂 Potato SOUPtember • I was recently inspired by @em_henderson to only-ish cook soups in the month of September! It’s kind of like a reset for your digestive system– moving from the crunchy, cold, raw summer dishes to slow, warm, cooked foods of the cooler months. Cooking veggies is almost like pre-digesting them, but without sacrificing nutrition and, in-fact, making different types of vitamins/minerals more available for your body. Soup is also super hydrating, keeps well, and is E A S Y to make. • Now I won’t be exclusively eating soup this month, but when I’m meal prepping for the week, Ill be opting for soups, chili’s, stews and the like. • Another thing I love about soups– they are intuitive cooking. No strict recipes needed, just a handful of this and a pinch of that, just like Grandma did it. • This creamy bowl of goodness is a twist on a classic potato soup! • I simply diced up about 8 golden potatoes, 1 zucchini, 1 yellow onion, 2 cloves of garlic (halved), orange bell pepper and threw it all in a large pot with a bit of olive oil. Over medium heat, roast (stirring) until onions begin to caramelize and become fragrant. Add ~8 cups of water, a vegetable-based billion cube, and a pinch of rosemary, 1/4 c nutritional yeast, salt and pepper. Place on the lid and let simmer for about an hour. • You can mash this up, leave it chunky, blend half and recombine, add more veggies or spice…. it’s yours! #nutritiontips

It’s easy to see somebody and think they have everything or things seem to come easy to them. Later on we find out its exactly the opposite. 🙇🏽‍♀️⁣ ⁣ Weight loss is no exception. 🏃🏽‍♂️It is difficult to make lifestyle changes and worry about the possibility of failing that comes along with the journey. It is also difficult going each day thinking about how your health is deteriorating and feeling trapped in a body you are not satisfied with. 🥴⁣ ⁣ 🧨🔥Our health will always be something we need to work at. Our bodies are amazing and do a lot for us, even when we are not nice to them. However, there is only so much our bodies can take, we need to put forth effort.
