I love zataar so much that I dream of putting it in everything I make. Zataar is a #spice #herbmixture of dried #oregano, #thyme, #sumac, #sesame& other things. My grandmother gifts all her grandkids a huge bag every season. She grinds it and picks it by hand. These zataar roasted nuts are super addicting. You can make these a week in advance. #زعتر Zataar spiced nuts
3 cups mixed raw nuts (untoasted); any combination of cashews, whole almonds, pecan halves, and pistachios
1 cup small pretzels (couldn’t find mine lol)
2 tablespoon extra virgin olive oil
2 tablespoons good zataar mixture
1 tbls ground sumac
3/4 teaspoon cayenne pepper (or another red pepper flakes) optional
1 teaspoon flaky sea salt or kosher salt
1. Spread the nuts on a baking sheet and roast in a 350F oven for 10 minutes, stirring once for even toasting.
2. In a medium bowl, mix together the olive oil, zataar, sumac, cayenne or pepper flakes.
3. Add the warm nuts, stirring until coated. Then mix in the salt and pretzels, and stir until the nuts and pretzels are completely coated.
4. Spread the mixture back on the baking sheet and return to the oven for 10 more minutes, stirring twice during cooking. Remove from oven and cool completely.
Once cool, this mixture can be stored in an airtight container for up to a week.
