View chef_allid's Instagram So I guess I made jambalaya tonight? ... I've never cooked with fresh okra before, but I was at the farm stand and they had the biggest, most beautiful okra I'd ever seen! I had no plan, but of course I had to buy it!  I ended up just winging it and the result ended up very similar to a jambalaya, but much faster, easier, less points and just as delicious!!

I started by dicing up a medium yellow onion, chopping a green bell pepper and slicing my 3 large fresh okra. I added them to a large skillet sprayed with nonstick cooking spray and sautéed them over medium heat until softened. .

While those were cooking, I boiled some water in a medium saucepan. When boiling I added 1 packet of Boil-In-Bag @minutericeus, and cooked according to package instructions.

Meanwhile, once the veggies were tender I added some extra jumbo raw shrimp (thawed, peeled and deveined) and Cajun seasoning and salt to taste and continued cooking until the shrimp were pink. Next I added 5 Nature's Promise Cajun Style Andouille Chicken Sausage (sliced) and a 14.5 oz can of diced tomatoes. Continue cooking for about 2 more minutes. .
