Macros are 20/5/4 protein/carbs/fats and the taste was on point for the sour cream and onion.

And even got some house cleaning done!] and super excited for the holiday week. And it’s birthday week!  [For me AND husband! He’s on Sunday, and I’m Monday! ] So, lots of exciting things are happening! But that’s no excuse to not get workouts in! There’s always time for a 30 minute workout! This morning I topped with some whipped cream, and @natierrasuperfoods dark chocolate chia seeds and dark chocolate goji berries !  Needless to say this was eaten in its entirety and delicious ! Loving the extra strength and energy in my lifts AND extra Oreos & Nutella I can fit into my macros  I know I've said this several times just in the last few days with all the excitement of Nationals, but I'm really excited about competing in 2018. I started my first reverse diet with @paulrevelia Nov '16 and since then, I've had a surgery that took weeks to recover from, a vacation in Italy, mini getaways throughout the year, AND I got married! In between and around all this, I competed at Team U and a National Qualifying show in the local area. Paul's really helped me find a groove in taking this sport that I love and making it fit into my lifestyle. As of right now.. food is going up (with untracked meals each week), cardio is cut significantly, and as the scale goes up, I'm trying to maintain a positive outlook and not pair a negative connotation with that number. I'm shifting my mindset to focus more on performance vs aesthetics.  Happy Tuesday!  1653040555938052009_1178208962

Ingredients:

Fresh eggs
Applegate uncured ham
Cherry tomatoes, sliced
Asparagus tops
Sea salt and freshly ground black pepper to taste
Optional: fresh herbs such as scallions, basil, or oregano
Instructions:

Preheat oven to 350 degrees f
Spray or coat regular size muffin tins with olive, avocado, or coconut oil.
Place one slice of ham in each tin, to form a cup.
Carefully break egg into each ham slice.
Top with Asparagus and tomato slices. Sprinkle with sea salt and pepper.
Bake in preheated 350 degree oven for 18-20 minutes until egg whites are set.
Sprinkle with fresh herbs before serving.
For food prep, cover tightly, refrigerated, for up to 3 days.
