2 1/2 cups flour, 1/3 cup brown sugar, 2 1/2 teaspoons baking powder, 1/2 teaspoon each baking soda, cinnamon, ginger and salt, pinch of cloves, 1/2 cup cold cubed butter, 175 mL buttermilk, 1/2 cup canned pumpkin puree, 1 egg, 1 teaspoon vanilla For Icing: 1 cup icing sugar, 2 tablespoons milk, 1/4 teaspoon cinnamon
Whisk flour, brown sugar, baking powder, baking soda, ginger, cinnamon, salt and cloves. Cut in butter until coarse. Whisk together buttermilk, pumpkin, egg and vanilla; add to flour mix and stir with fork to make soft dough. With lightly floured hands, press dough into ball. On floured surface, knead 10X. Pat into 10X7 inch rectangle; cut into 6 squares, then cut each in half diagonally. Bake at 400 for 18-20 minutes. Cool on rack. Whisk icing ingredients and spread. Let stand 1 hour. HOPE YOU ENJOY!
