First preheat oven to 400 and chop up cauliflower and broccoli and toss with a dash of oil and salt and pepper. Put in the oven for thirty minutes.
Place rice in rice cooker and get it goin! Chop pineapple into very small chunks and chop up fresh mint and mix.
Chop tomato and cucumber very small, mix with fresh mint and after rice is done place cous cous into the rice cooker, it will cook in about 5 minutes. Toss the mint, tomato, and cucumber together with cous cous.
Chop lettuce and some more cucumber and tomato and place on plate, with rice, pineapple salsa, baked cauliflower and broccoli. Drizzle with orange miso dressing as follows:
Blend together 2 large carrots chopped, 1 inch shredded ginger, 1 clove of garlic, 2 teaspoons sesame oil, 3 tbsp shiro miso, 1/2 cup rice vinegar, 1/4 cup olive oil, 1/4 cup water.
